Cordoban Flamenquines
Ingredients
4 Pork loin fillets
Serrano ham slices
2 Eggs
Bread crumbs
Olive oil
½ cup of White wine
1 Garlic clove
Chopped parsley
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Carefully place the pork loin fillet between two sheets of plastic wrap.
Step 2 : Gently pound with a meat mallet or rolling pin until tripled in size, ensuring a uniform thickness.
Step 3 : If desired, season the fillet with garlic slices, chopped parsley, and a dash of white wine, then let it rest in the refrigerator for about two hours to absorb the flavors.
Step 4 : Then, drain and pat dry the fillets with paper towels, preparing them for stuffing.
Step 5 : Extend each fillet and cover with a slice of serrano ham, rolling carefully and firmly to ensure a compact roll.
Step 6 : To bread the flamenquines, place bread crumbs in a wide dish.
Step 7 : In another bowl, beat the eggs with a pinch of salt and pepper.
Step 8 : First dip each roll into the egg, ensuring the ends are well coated, then roll it in the bread crumbs.
Step 9 : It is recommended to repeat this process for a more sealed and consistent coating.
Step 10 : In a skillet, heat abundant oil over medium heat.
Step 11 : When the oil reaches the proper temperature, fry the flamenquines, turning them to brown evenly on all sides.
Step 12 : Once golden, place them on paper towels to remove excess oil.
Step 13 : Finally, serve hot, accompanied by french fries and your preferred sauce, enjoying a dish full of flavor and tradition.
