Ingredients

1 Eggplant

120 grams of Flour

Olive oil

Cane honey

1 pinch of Salt

Preparation

Step 1 : The first step is to preheat the oven to 200°C, or 390°F, to create the ideal environment for cooking.

Step 2 : Next, the eggplant should be sliced into thin rounds, about 3 millimeters thick.

Step 3 : It is recommended to use a mandoline for uniform and precise cuts, although you can also do it carefully with a knife.

Step 4 : To reduce the bitterness of the eggplant, it is useful to soak the slices in a bowl of salted water for a few minutes.

Step 5 : After that time, they can be drained and dried if desired.

Step 6 : Once ready, the eggplant slices should be completely coated with buckwheat flour, making sure each one is well covered on both sides.

Step 7 : This step helps them become crispy when baked.

Step 8 : The floured slices are placed on a baking sheet, which can be lined with parchment paper to prevent sticking.

Step 9 : Before baking, add a little sea salt on top and a drizzle of extra virgin olive oil to enhance flavor and improve texture.

Step 10 : The baking process lasts about 20 minutes.

Step 11 : It is advisable to turn the slices halfway through cooking so they cook evenly and brown nicely.

Step 12 : When they are golden and crispy, remove them from the oven.

Step 13 : Finally, serve the eggplants on a plate and drizzle with cane honey to taste.

Step 14 : The honey adds a sweet touch that perfectly balances the vegetable flavor and the crispy texture of the eggplant.
