Ingredients

300 grams of Baby squids

Flour

1 pinch of Salt

1 Lemon

Sunflower oil

Olive oil

Preparation

Step 1 : To begin, the baby squids should be carefully washed under running water, and then the skin and internal beak should be gently removed.

Step 2 : Once cleaned, it is important to dry them very well with paper towels, removing all moisture so they are ready to fry.

Step 3 : Next, coat the squids completely by passing them through chickpea flour.

Step 4 : It is advisable to remove excess flour using a sieve so it doesn’t become too thick and the squids have a uniform texture.

Step 5 : In a skillet or fryer, heat a generous amount of sunflower or mild olive oil until reaching the proper frying temperature.

Step 6 : When the oil is hot, carefully place the squids in the oil and fry until golden and crispy, occasionally moving them to cook evenly.

Step 7 : Once fried, remove them and place on paper towels to remove excess oil.

Step 8 : To serve, you can accompany them with a splash of lemon and, if desired, homemade mayonnaise or aioli, which will add an extra touch of flavor.
