Ham Croquettes
Ingredients

1 Slice of ham
80 grams of Flour
80 grams of Butter
200 grams of Chopped ham
800 milliliters of Milk
1 pinch of Salt
Nutmeg
1 Green onion
Flour
Egg
Breadcrumbs
Preparation
Step 1 : First, the milk is infused in a saucepan along with the ham slice and brought to a boil.
Step 2 : Once the milk boils, cover the saucepan and let it cool until it reaches a manageable temperature.
Step 3 : Meanwhile, finely chop the ham into small pieces.
Step 4 : Reduce the green onion to a very fine dice and sauté in a pan with a little oil until transparent.
Step 5 : Then, add the butter and wait for it to melt completely.
Step 6 : In a separate bowl, sift the flour and incorporate it into the pan with the green onion and butter, cooking for about five minutes to eliminate the raw taste.
Step 7 : Gradually pour in the infused milk, stirring constantly until you get a creamy and smooth béchamel sauce.
Step 8 : Once ready, add the chopped ham pieces, a pinch of nutmeg, and adjust the salt to taste, mixing well to integrate all ingredients.
Step 9 : Cover the dough with plastic wrap, making sure the wrap touches the surface to prevent a crust from forming, and chill in the refrigerator overnight.
Step 10 : The next day, with the dough firm, shape the croquettes into the desired form.
Step 11 : Before cooking, pass them through flour, then beaten egg, and finally breadcrumbs to get a crispy coating.
Step 12 : Finally, fry the croquettes in hot oil until golden and crispy.
Step 13 : Once they are ready, place them on paper towels to remove excess oil before serving.
