Ingredients

1 Partridge in quarters

400 grams of Beans

2 Carrots

1 Celery stalk

1 Leek

2 Skinned tomatoes

2 Onions

1 Garlic head

2 Bay leaves

30 milliliters of Olive oil

100 milliliters of White wine

10 Black peppercorns

1 teaspoon of Rosemary

1 teaspoon of Thyme

1 teaspoon of Red paprika

1 liter of Chicken broth

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Preparation begins the night before, when the beans are soaked in cold water with a pinch of salt.

Step 2 : The next day, the soaked beans are placed in a pot along with the carrots, celery, leek, tomatoes, onion, and garlic, and cooked over low heat for about an hour.

Step 3 : Meanwhile, in a terracotta casserole, heat the oil and sauté the chopped onion and garlic together with the bay leaves until transparent.

Step 4 : Next, add the peeled and chopped tomatoes, and cook them along with the sofrito, stirring to prevent sticking.

Step 5 : When the sofrito is ready, sear the partridge in the same casserole, browning it in the sofrito until it changes color.

Step 6 : Then, pour the white wine over the partridge and let it cook for a few minutes, allowing the alcohol to evaporate and the flavors to intensify.

Step 7 : Add the spices: pepper, rosemary, thyme, and paprika, and stir well to release their aromas.

Step 8 : Next, pour in the hot chicken broth and bring to a boil.

Step 9 : The cooked beans are separated from the broth and added to the casserole with the partridge, gently mixing all ingredients.

Step 10 : The preparation is cooked over low heat for about 40 minutes, adjusting the salt if necessary.

Step 11 : If a creamier texture is desired, one tablespoon of beans can be mashed and added to the broth to thicken it.

Step 12 : Finally, the recipe is served either in the same casserole or in deep plates, presenting a piece of partridge accompanied by the delicious bean mixture in its broth, ready to enjoy a comforting and flavorful dish.
