Galician Sardine Empanada

Ingredients

1 Galician empanada dough

1 Onion

1 Garlic clove

1 Small leek

½ Red pepper

½ Green pepper

½ cup of Olive oil

2 tablespoons of Tomato sauce cups

1 cup of White wine

1 tablespoon of Murcia pimentón (paprika)

1 pinch of Salt

½ kilogram of Xoubas or sardines

¼ cup of Lemon juice

Preparation

Step 1 : The preparation of this recipe begins with chopping the onion, leek, garlic, and peppers, then placing them in a large pot with olive oil.

Step 2 : Sauté the onion until golden, add salt, paprika, and the tablespoons of tomato sauce, letting it cook for 10 minutes, then add the wine.

Step 3 : This mixture should be set aside.

Step 4 : Next, take the galician empanada dough and cut it into two halves.

Step 5 : Using a rolling pin, stretch one of the halves and place it in a baking dish.

Step 6 : Spread the vegetable mixture evenly over this dough base.

Step 7 : Then, add the previously marinated xoubas in lemon juice.

Step 8 : Stretch the other half of the dough and place it over the vegetable filling, sealing the empanada.

Step 9 : Finally, brush the empanada with beaten egg and bake for 30 minutes at 200°C.
