Ingredients

16 Lamb Manitas

4 Garlic cloves

3 Onions

3 Choricero peppers

75 milliliters of Brandy

150 milliliters of White wine

Olive oil

1 pinch of Pepper

1 pinch of Salt

Preparation

Step 1 : The manitas should be blanched in cold water and thoroughly washed under running water.

Step 2 : Then, place them in a pressure cooker with water and salt, cooking for 35 minutes.

Step 3 : It is important to reserve the cooking broth, as it will be used to prepare the sauce.

Step 4 : Meanwhile, the choricero peppers are hydrated in hot water.

Step 5 : In a wide, shallow pan, sauté some chopped garlic cloves and onions for about 20 minutes.

Step 6 : Once sautéed, add the choricero peppers and pour a splash of brandy and white wine, allowing the alcohol to fully evaporate.

Step 7 : Next, add about 600 ml of the reserved cooking broth from the manitas, and simmer for 10 minutes.

Step 8 : Then, blend the sauce and strain it through a sieve to ensure it’s smooth.

Step 9 : Adjust the seasoning with salt and pepper to taste.

Step 10 : Finally, add the cooked manitas to the sauce and simmer on low heat for about 10 more minutes, so they absorb the flavors and become very tender.

Step 11 : Serve accompanied by bread if desired, to fully enjoy its texture and flavor.
