Ingredients

800 grams of Potatoes

2 Eggs

100 grams of Onion

2 Garlic cloves

45 milliliters of Olive oil

125 milliliters of White wine

½ gram of Saffron

Parsley

1 pinch of Salt

Preparation

Step 1 : First, peel and cut the potatoes into slices about one centimeter thick.

Step 2 : Then, season them and coat with flour and beaten eggs.

Step 3 : Next, fry them in plenty of hot oil until golden and crispy, then set aside on a large plate to keep their coating.

Step 4 : In a pan, prepare a paste by crushing the garlic cloves, saffron, parsley, and salt until obtaining an aromatic mash.

Step 5 : In the same pan, sauté the chopped onion in a few tablespoons of oil until it begins to brown.

Step 6 : Add a tablespoon of flour and quickly mix to form a roux.

Step 7 : Incorporate the paste into the pan and stir a little.

Step 8 : Then, add the white wine and let it boil for about two minutes to allow the alcohol to evaporate.

Step 9 : Next, add broth along with saffron, mix well, and bring to a boil.

Step 10 : Carefully transfer the potatoes to the pan with the sofrito.

Step 11 : Cook over low heat for approximately 30 minutes, gently stirring from time to time, until the potatoes are tender and have absorbed all the flavors.
