Seafood Soupy Rice
Ingredients
500 grams of Rice
300 grams of Prawns
6 Crayfish
12 Mussels
12 Clams
1 Ripe tomato
1 Onion
2 Garlic cloves
100 milliliters of Olive oil
1 ½ liter of Fish broth
Saffron
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : To prepare this delicious rice, start by washing the mussels and clams separately.
Step 2 : Then, place them in two pots with water, cover, and bring to a boil, stirring occasionally to open the shells.
Step 3 : Once ready, remove from heat and strain both broths, reserving them for later.
Step 4 : Next, peel and chop the garlic, onion, and tomato.
Step 5 : In a paella pan, heat some olive oil and sauté the prawns and crayfish until golden.
Step 6 : Once cooked, remove them and in the same oil, sauté the garlic, onion, and tomato.
Step 7 : Add the rice and toast until transparent.
Step 8 : Then, add the mussel and clam broths along with the fish broth, a few strands of saffron, salt, and pepper.
Step 9 : Let it cook over high heat for 10 minutes, then reduce the heat and simmer for another 10 minutes.
Step 10 : Near the end of cooking, reintroduce the prawns and crayfish that were reserved earlier.
Step 11 : Let the paella rest for 5 minutes before serving so the flavors can meld properly.
