Spanish Rice

Ingredients

2 cups of Rice

250 grams of Shrimps

1 kilogram of Mussels

100 grams of Olives

1 Chopped carrot

1 Onion

1 pinch of Pepper

Fresh parsley

2 tablespoons of Lard

1 Measuring spoon of saffron

3 cups of White wine

8 Threads of saffron

4 cups of Seafood fumet broth

Preparation

Step 1 : The seafood should be carefully cleaned and cooked for 30 minutes in a mixture of water, white wine, and lard.

Step 2 : Once cooked, strain the resulting broth, known as fumet, and set it aside for later.

Step 3 : In a hot skillet, add the lard and sauté the onion, carrot, and fresh parsley until tender.

Step 4 : Season with salt and pepper to taste.

Step 5 : In a rice cooker, add the oil along with the saffron and rice, allowing it to lightly brown without burning.

Step 6 : Next, add the prepared vegetables and the hot fumet, adding boiling water if necessary until the rice reaches the desired level of doneness.

Step 7 : Add the shrimps and mussels, and garnish the dish with olives before serving, either hot or cold.
