Ingredients

Watercress Stew

250 grams of Pork meat

500 grams of Watercress

750 grams of Potatoes

250 grams of Pinto beans or white beans

1 Onion

1 Tomato

1 Green pepper

2 Garlic cloves

1 Corn on the cob or maize cob

100 milliliters of Extra virgin olive oil

Saffron threads

1 pinch of Salt

Preparation

Step 1 : To prepare this recipe, start by soaking the beans in water for 12 hours.

Step 2 : Then, drain them and place in a pot covered with water.

Step 3 : When they come to a boil, add a glass of cold water and the chopped meat, letting them cook for at least an hour.

Step 4 : Meanwhile, chop the watercress and cut the potatoes into cubes.

Step 5 : Also dice the onion, tomato, and green pepper, and crush the garlic.

Step 6 : Next, add to the pot with the meats, the watercress, potatoes, onion, tomato, green pepper, garlic, corn on the cob, oil, and saffron, and cook for another half hour.

Step 7 : Season with salt and pepper to taste.

Step 8 : Finally, let it rest for a few minutes before serving.
