Ricotta Tart
Ingredients
500 grams of Brossat or ricotta
250 grams of Brown sugar
5 Eggs
1 Lemon
1 teaspoon of Cinnamon

Step 1 : First, preheat the oven to 180°C.
Step 2 : Then, separate the egg whites from the yolks and beat the whites until they form stiff peaks.
Step 3 : In another bowl, mix the yolks, sugar, citrus zest, and cinnamon until smooth.
Step 4 : Next, add the ricotta to the mixture and stir again.
Step 5 : Afterwards, fold in the beaten egg whites gently to combine all ingredients.
Step 6 : Then, pour the batter into an oven-safe mold and bake for approximately 30 minutes.
Step 7 : Once done, let it cool in the refrigerator and unmold when cold.
