The Andalusian stew is an iconic dish from Andalusia that combines chickpeas, various meats, and fresh vegetables cooked slowly.

Andalusian Stew
Ingredients
400 grams of Chickpeas
500 grams of Chicken thighs
300 grams of Beef shank
200 grams of Salted pork bacon
1 White bone
1 Ham bone
250 grams of Salted pork ribs
2 Chorizos
3 Carrots
2 Potatoes
2 Celery stalks
1 Leek
1 Turnip
Fresh mint
Noodles
1 pinch of Salt
Preparation
Step 1 : Start the preparation the night before by soaking the chickpeas in salted water for 12 hours, allowing them to soften properly.
Step 2 : The next day, in a large pot, bring plenty of water to a boil and add the meats and chorizos.
Step 3 : Let it cook for about 5 to 10 minutes to remove excess salt and impurities.
Step 4 : Then, remove the meats and the cooking water, rinse and clean them thoroughly.
Step 5 : Place them back in the pot and cover with approximately 4 liters of clean water, bringing it to a boil again.
Step 6 : Once boiling, add the pre-soaked and rinsed chickpeas, and let everything simmer gently for one hour, skimming any foam that forms on the surface to keep the broth clear.
Step 7 : Meanwhile, peel and cut the carrots, potatoes, celery, leek, and turnip into large chunks.
Step 8 : After the first hour of cooking the meats and chickpeas, add the vegetables to the pot and continue cooking everything together on low heat for about 90 minutes, or until both the meats and vegetables are tender.
Step 9 : Once everything is cooked, separate the meats, vegetables, and chickpeas.
Step 10 : Strain the broth through a fine sieve to obtain a clear and flavorful liquid.
Step 11 : At this point, adjust the salt if necessary.
Step 12 : The dish can be served in different ways: one option is to present it as a stew, garnished with mint and a little broth.
Step 13 : You can also prepare a soup with the broth and add pasta or rice, serving it with the meats and vegetables for a comforting and flavorful meal.
