1 Celery stalk
1 Ham piece
1 pinch of Salt

Preparation
Step 1 : Place the meats on a tray and roast in the oven for one hour at 200°C.
Step 2 : This process aims to enhance the flavor and give more body to the broth.
Step 3 : Meanwhile, the vegetables are toasted in a pot to intensify their flavor; they can also be toasted in the oven if preferred.
Step 4 : Once toasted, the vegetables are mixed with the browned meats in the pot and covered with water.
Step 5 : Increase the heat to start boiling and foam the surface to remove any impurities that may appear.
Step 6 : The cooking continues at a gentle simmer for about two hours if using a conventional pot, or about 40 minutes with a pressure cooker, to produce a tasty, rich broth.
Step 7 : At the end of cooking, strain the broth and set aside the liquid, while the meats are separated and chopped into fine pieces.
Step 8 : If desired, these pieces can be sautéed with small ham tacos to add more flavor.
Step 9 : To prepare the soup, boil the noodles in the broth, and once cooked, serve the noodles in deep bowls topped with the chopped meats.
Step 10 : Finally, garnish with chopped fresh parsley, adding a touch of color and freshness to the dish.
